Description

A creamy and delicious Tuscan Chicken served over spaghetti squash, perfect for a healthy meal.


Ingredients

  • 2 medium spaghetti squash (about 34 pounds total)
  • 1 pound boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh spinach
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Fresh basil leaves for garnish

Instructions

  1. Preheat the oven to 400°F. Cut the spaghetti squash in half lengthwise and scoop out the seeds. Drizzle with 1 tablespoon of olive oil, and season with salt and pepper. Place cut-side down on a baking sheet and roast for 30-40 minutes, or until tender.
  2. While the squash is roasting, season the chicken breasts with Italian seasoning, garlic powder, salt, and pepper. In a large skillet, heat the remaining tablespoon of olive oil over medium-high heat. Add the chicken and cook for 6-7 minutes on each side, or until cooked through and no longer pink in the center. Remove from the skillet and let rest for a few minutes before slicing.
  3. In the same skillet, add the cherry tomatoes and cook for 2-3 minutes until they start to soften. Add the spinach and cook until wilted. Pour in the heavy cream and bring to a simmer. Stir in the Parmesan cheese until melted and combined.
  4. Once the spaghetti squash is done, use a fork to scrape the flesh into strands. Add the spaghetti squash to the skillet with the creamy tomato mixture and toss to combine.
  5. Serve the Tuscan chicken on top of the spaghetti squash mixture, garnished with fresh basil leaves.

Notes

  • For a lighter version, substitute the heavy cream with coconut milk or a low-fat alternative.
