A creamy and delicious Tuscan Chicken served over spaghetti squash, perfect for a healthy meal.

- 2 medium spaghetti squash (about 3–4 pounds total)
- 1 pound boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 teaspoon Italian seasoning
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1 cup cherry tomatoes, halved
- 1 cup fresh spinach
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Fresh basil leaves for garnish
Instructions
- Preheat the oven to 400°F. Cut the spaghetti squash in half lengthwise and scoop out the seeds. Drizzle with 1 tablespoon of olive oil, and season with salt and pepper. Place cut-side down on a baking sheet and roast for 30-40 minutes, or until tender.
- While the squash is roasting, season the chicken breasts with Italian seasoning, garlic powder, salt, and pepper. In a large skillet, heat the remaining tablespoon of olive oil over medium-high heat. Add the chicken and cook for 6-7 minutes on each side, or until cooked through and no longer pink in the center. Remove from the skillet and let rest for a few minutes before slicing.
- In the same skillet, add the cherry tomatoes and cook for 2-3 minutes until they start to soften. Add the spinach and cook until wilted. Pour in the heavy cream and bring to a simmer. Stir in the Parmesan cheese until melted and combined.
- Once the spaghetti squash is done, use a fork to scrape the flesh into strands. Add the spaghetti squash to the skillet with the creamy tomato mixture and toss to combine.
- Serve the Tuscan chicken on top of the spaghetti squash mixture, garnished with fresh basil leaves.
Notes
- For a lighter version, substitute the heavy cream with coconut milk or a low-fat alternative.
- Add other vegetables like bell peppers or zucchini for extra flavor and nutrition.
