  • 3/4 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon vanilla extract
  • 1/4 cup granulated sugar (for rolling)

Instructions

  1. Preheat your oven to 350°F. Line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, turmeric, ginger, cinnamon, cloves, and salt. Set aside.
  3. In a large mixing bowl, cream the softened butter, brown sugar, and granulated sugar together until light and fluffy, about 2-3 minutes.
  4. Add the egg, grated fresh ginger, and vanilla extract to the butter mixture. Mix until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. Scoop tablespoon-sized portions of dough and roll them into balls. Roll each ball in the additional granulated sugar to coat.
  7. Place the sugar-coated dough balls on the prepared baking sheets, spacing them about 2 inches apart.
  8. Bake in the preheated oven for 10-12 minutes, or until the edges are set and the tops are slightly cracked.
  9. Remove from the oven and let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • For a spicier kick, add 1/4 teaspoon of cayenne pepper to the dry ingredients.
