Description
A delicious and creamy pasta dish made with turmeric cashew cream and fresh zucchini ribbons.

- 8 ounces whole wheat pasta
- 1 cup raw cashews, soaked in water for at least 4 hours
- 1 cup water
- 1 tablespoon olive oil
- 1 teaspoon ground turmeric
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 2 medium zucchinis, spiralized or cut into thin ribbons
- 1 tablespoon lemon juice
- Fresh parsley, chopped (for garnish)
Instructions
- Cook the whole wheat pasta according to package instructions until al dente. Drain and set aside, reserving ½ cup of the pasta water.
- In a blender, combine the soaked cashews, water, olive oil, turmeric, garlic powder, onion powder, salt, and pepper. Blend until smooth and creamy. If the mixture is too thick, add a little reserved pasta water until desired consistency is reached.
- In a large skillet over medium heat, add the zucchini ribbons and sauté for 2-3 minutes until slightly softened.
- Add the cooked pasta to the skillet with the zucchini, then pour the turmeric cashew cream over the top. Toss everything together until well combined and heated through.
- Stir in the lemon juice and adjust seasoning with more salt and pepper if needed.
- Serve immediately, garnished with fresh parsley.
Notes
- For added protein, consider mixing in cooked chickpeas or grilled chicken.
- To enhance the flavor, add a pinch of red pepper flakes for a spicy kick or a sprinkle of nutritional yeast for a cheesy flavor.
