Description

A delicious and creamy pasta dish made with turmeric cashew cream and fresh zucchini ribbons.


Ingredients

  • 8 ounces whole wheat pasta
  • 1 cup raw cashews, soaked in water for at least 4 hours
  • 1 cup water
  • 1 tablespoon olive oil
  • 1 teaspoon ground turmeric
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 2 medium zucchinis, spiralized or cut into thin ribbons
  • 1 tablespoon lemon juice
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the whole wheat pasta according to package instructions until al dente. Drain and set aside, reserving ½ cup of the pasta water.
  2. In a blender, combine the soaked cashews, water, olive oil, turmeric, garlic powder, onion powder, salt, and pepper. Blend until smooth and creamy. If the mixture is too thick, add a little reserved pasta water until desired consistency is reached.
  3. In a large skillet over medium heat, add the zucchini ribbons and sauté for 2-3 minutes until slightly softened.
  4. Add the cooked pasta to the skillet with the zucchini, then pour the turmeric cashew cream over the top. Toss everything together until well combined and heated through.
  5. Stir in the lemon juice and adjust seasoning with more salt and pepper if needed.
  6. Serve immediately, garnished with fresh parsley.

Notes

  • For added protein, consider mixing in cooked chickpeas or grilled chicken.
  • To enhance the flavor, add a pinch of red pepper flakes for a spicy kick or a sprinkle of nutritional yeast for a cheesy flavor.
