Ingredients

  • 2 lamb chops (about 1 inch thick, about 1 pound total)
  • 1 cup shelled pistachios
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1/2 cup plain Greek yogurt
  • 2 tablespoons fresh mint, finely chopped
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced

Instructions

  1. Preheat your oven to 400°F.
  2. In a food processor, combine the pistachios, cumin, coriander, salt, and black pepper. Pulse until the mixture resembles coarse crumbs.
  3. Rub the lamb chops with olive oil on both sides. Press the pistachio mixture onto the lamb chops to coat them evenly.
  4. Place the coated lamb chops on a baking sheet lined with parchment paper. Bake in the preheated oven for 15-20 minutes for medium-rare, or until desired doneness.
  5. While the lamb is baking, prepare the yogurt sauce by mixing the Greek yogurt, mint, lemon juice, and minced garlic in a small bowl. Season with salt to taste.
  6. Once the lamb is done, let it rest for 5 minutes before serving. Serve the lamb chops with a generous dollop of the yogurt sauce on top.

Notes

  • For added flavor, try marinating the lamb chops in olive oil, garlic, and herbs for a few hours before coating them with the pistachio mixture.
  • For a twist, substitute the pistachios with walnuts or almonds for a different nutty flavor.
