- 2 lamb chops (about 1 inch thick, about 1 pound total)
- 1 cup shelled pistachios
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- 1/2 cup plain Greek yogurt
- 2 tablespoons fresh mint, finely chopped
- 1 tablespoon lemon juice
- 1 clove garlic, minced
Instructions
- Preheat your oven to 400°F.
- In a food processor, combine the pistachios, cumin, coriander, salt, and black pepper. Pulse until the mixture resembles coarse crumbs.
- Rub the lamb chops with olive oil on both sides. Press the pistachio mixture onto the lamb chops to coat them evenly.
- Place the coated lamb chops on a baking sheet lined with parchment paper. Bake in the preheated oven for 15-20 minutes for medium-rare, or until desired doneness.
- While the lamb is baking, prepare the yogurt sauce by mixing the Greek yogurt, mint, lemon juice, and minced garlic in a small bowl. Season with salt to taste.
- Once the lamb is done, let it rest for 5 minutes before serving. Serve the lamb chops with a generous dollop of the yogurt sauce on top.
Notes
- For added flavor, try marinating the lamb chops in olive oil, garlic, and herbs for a few hours before coating them with the pistachio mixture.
- For a twist, substitute the pistachios with walnuts or almonds for a different nutty flavor.
