- 1 cup crushed graham crackers
- 4 tablespoons unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream
- 1 cup diced Turkish delight (rose or lemon flavored)
- 1/2 cup chopped pistachios, for garnish
Instructions
- In a medium bowl, combine the crushed graham crackers and melted butter. Mix until the crumbs are evenly coated.
- Divide the mixture evenly among 6 small cups or ramekins, pressing down to form a crust.
- In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth.
- Gradually add the powdered sugar and vanilla extract, mixing until well combined.
- In a separate bowl, whip the heavy cream until stiff peaks form.
- Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
- Fold in the diced Turkish delight, being careful not to break it up too much.
- Spoon the cheesecake mixture into the prepared cups over the graham cracker crusts, smoothing the tops.
- Refrigerate the cheesecake cups for at least 4 hours, or until set.
- Before serving, sprinkle the tops with chopped pistachios for garnish.
Notes
- For a lighter version, substitute half of the cream cheese with Greek yogurt.
- You can experiment with different flavors of Turkish delight.
- Add a drizzle of honey on top for extra sweetness.
