- 1 pound ground turkey
- 2 cloves garlic, finely chopped
- 1 inch piece of fresh ginger, minced
- 4 cups low-sodium chicken stock
- 2 tablespoons tamari or soy sauce
- 1 tablespoon white miso (optional)
- 1 cup shiitake mushrooms, sliced
- 1 cup fresh baby kale
- 2 green onions, chopped
- 2 soft-boiled eggs (optional)
- Salt and freshly ground black pepper to taste
Instructions
- Prepare the ramen noodles according to the package instructions. Once cooked, drain and set aside.
- In a large saucepan, warm the olive oil over medium heat.
- Add the ground turkey and sauté until golden brown, breaking it apart with a wooden spoon (about 5 to 7 minutes).
- Incorporate the chopped garlic and minced ginger, cooking for an additional 1 to 2 minutes until aromatic.
- Gradually pour in the chicken stock, followed by the tamari or soy sauce, and the white miso if using. Bring to a gentle simmer.
- Add the sliced shiitake mushrooms and cook for around 5 minutes until softened.
- Add the fresh baby kale and stir until wilted (about 2 minutes).
- Adjust seasoning with salt and pepper to taste.
- To serve, place the cooked ramen noodles in bowls and ladle the turkey broth mixture over the top.
- Garnish with chopped green onions and a soft-boiled egg if desired.
