  • 1 pound ground turkey
  • 2 cloves garlic, finely chopped
  • 1 inch piece of fresh ginger, minced
  • 4 cups low-sodium chicken stock
  • 2 tablespoons tamari or soy sauce
  • 1 tablespoon white miso (optional)
  • 1 cup shiitake mushrooms, sliced
  • 1 cup fresh baby kale
  • 2 green onions, chopped
  • 2 soft-boiled eggs (optional)
  • Salt and freshly ground black pepper to taste

Instructions

  1. Prepare the ramen noodles according to the package instructions. Once cooked, drain and set aside.
  2. In a large saucepan, warm the olive oil over medium heat.
  3. Add the ground turkey and sauté until golden brown, breaking it apart with a wooden spoon (about 5 to 7 minutes).
  4. Incorporate the chopped garlic and minced ginger, cooking for an additional 1 to 2 minutes until aromatic.
  5. Gradually pour in the chicken stock, followed by the tamari or soy sauce, and the white miso if using. Bring to a gentle simmer.
  6. Add the sliced shiitake mushrooms and cook for around 5 minutes until softened.
  7. Add the fresh baby kale and stir until wilted (about 2 minutes).
  8. Adjust seasoning with salt and pepper to taste.
  9. To serve, place the cooked ramen noodles in bowls and ladle the turkey broth mixture over the top.
  10. Garnish with chopped green onions and a soft-boiled egg if desired.
