- 2 tablespoons olive oil
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper (adjust for spice preference)
- 1 can (14.5 ounces) diced tomatoes, undrained
- 2 cups chicken broth
- 1 pound fresh okra, trimmed and cut into 1-inch pieces
- 1 teaspoon salt (or to taste)
- 1/2 teaspoon black pepper
- 1 tablespoon lemon juice
- Fresh cilantro or parsley, for garnish
Instructions
- In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the chicken pieces to the pot and cook until browned on all sides, about 5-7 minutes.
- Sprinkle in the cumin, coriander, paprika, and cayenne pepper. Stir well to coat the chicken with the spices.
- Pour in the diced tomatoes and chicken broth. Bring the mixture to a boil, then reduce the heat to low and simmer for 15 minutes.
- Add the okra, salt, and black pepper to the pot. Stir to combine and simmer for another 15-20 minutes, or until the okra is tender and the chicken is cooked through.
- Stir in the lemon juice just before serving.
- Serve hot, garnished with fresh cilantro or parsley.
Notes
- For a heartier stew, add 1 cup of diced potatoes or carrots along with the okra.
- If you prefer a vegetarian version, substitute the chicken with chickpeas and use vegetable broth instead of chicken broth.
