Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper (adjust for spice preference)
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 2 cups chicken broth
  • 1 pound fresh okra, trimmed and cut into 1-inch pieces
  • 1 teaspoon salt (or to taste)
  • 1/2 teaspoon black pepper
  • 1 tablespoon lemon juice
  • Fresh cilantro or parsley, for garnish

Instructions

  1. In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Stir in the minced garlic and cook for an additional minute until fragrant.
  3. Add the chicken pieces to the pot and cook until browned on all sides, about 5-7 minutes.
  4. Sprinkle in the cumin, coriander, paprika, and cayenne pepper. Stir well to coat the chicken with the spices.
  5. Pour in the diced tomatoes and chicken broth. Bring the mixture to a boil, then reduce the heat to low and simmer for 15 minutes.
  6. Add the okra, salt, and black pepper to the pot. Stir to combine and simmer for another 15-20 minutes, or until the okra is tender and the chicken is cooked through.
  7. Stir in the lemon juice just before serving.
  8. Serve hot, garnished with fresh cilantro or parsley.

Notes

  • For a heartier stew, add 1 cup of diced potatoes or carrots along with the okra.
  • If you prefer a vegetarian version, substitute the chicken with chickpeas and use vegetable broth instead of chicken broth.
