Ingredients

  • 1 can of tuna, drained
  • 1/2 cup labneh
  • 1/4 cup diced cucumber
  • 1/4 cup diced tomatoes
  • 1/4 cup chopped parsley
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • 4 slices of whole grain bread

Instructions

  1. In a bowl, combine the drained tuna, labneh, diced cucumber, diced tomatoes, chopped parsley, and lemon juice.
  2. Mix well and season with salt and pepper to taste.
  3. Spread the tuna and labneh mixture evenly on two slices of whole grain bread.
  4. Top with the remaining slices of bread to form sandwiches.
  5. Cut in half and serve immediately.
