Description

A delicious fusion of Korean tteokbokki and classic mac and cheese, this dish combines creamy cheese with spicy kimchi and rice cakes for a unique flavor experience.


Ingredients

  • 2 cups elbow macaroni
  • 1 tablespoon vegetable oil
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 1 cup kimchi, chopped
  • 1 cup tteok (Korean rice cakes), sliced
  • 2 cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 2 cups milk
  • 1 tablespoon gochujang (Korean chili paste)
  • 1 tablespoon soy sauce
  • 1 teaspoon sugar
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt
  • 2 green onions, sliced (for garnish)

Instructions

  1. Cook the elbow macaroni according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the vegetable oil over medium heat. Add the diced onion and sauté for about 3-4 minutes, until translucent.
  3. Stir in the minced garlic and cook for an additional 1 minute until fragrant.
  4. Add the chopped kimchi and sliced tteok to the skillet, cooking for about 3-5 minutes until heated through.
  5. In a separate saucepan, combine the milk, gochujang, soy sauce, sugar, black pepper, and salt. Heat over medium heat, stirring until the gochujang is fully dissolved.
  6. Gradually add the cheddar and mozzarella cheeses to the milk mixture, stirring until melted and smooth.
  7. Combine the cooked macaroni with the kimchi and tteok mixture, then pour the cheese sauce over the top. Stir until everything is well coated.
  8. Cook on low heat for an additional 2-3 minutes, stirring occasionally, until everything is heated through.
  9. Serve hot, garnished with sliced green onions.

Notes

  • For a spicier kick, add more gochujang or a sprinkle of red pepper flakes.
  • You can substitute the elbow macaroni with gluten-free pasta or use different types of cheese like pepper jack for added flavor.
