Description
A delicious fusion of Korean tteokbokki and classic mac and cheese, this dish combines creamy cheese with spicy kimchi and rice cakes for a unique flavor experience.

- 2 cups elbow macaroni
- 1 tablespoon vegetable oil
- 1/2 cup diced onion
- 2 cloves garlic, minced
- 1 cup kimchi, chopped
- 1 cup tteok (Korean rice cakes), sliced
- 2 cups shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 2 cups milk
- 1 tablespoon gochujang (Korean chili paste)
- 1 tablespoon soy sauce
- 1 teaspoon sugar
- 1/2 teaspoon black pepper
- 1/4 teaspoon salt
- 2 green onions, sliced (for garnish)
Instructions
- Cook the elbow macaroni according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the vegetable oil over medium heat. Add the diced onion and sauté for about 3-4 minutes, until translucent.
- Stir in the minced garlic and cook for an additional 1 minute until fragrant.
- Add the chopped kimchi and sliced tteok to the skillet, cooking for about 3-5 minutes until heated through.
- In a separate saucepan, combine the milk, gochujang, soy sauce, sugar, black pepper, and salt. Heat over medium heat, stirring until the gochujang is fully dissolved.
- Gradually add the cheddar and mozzarella cheeses to the milk mixture, stirring until melted and smooth.
- Combine the cooked macaroni with the kimchi and tteok mixture, then pour the cheese sauce over the top. Stir until everything is well coated.
- Cook on low heat for an additional 2-3 minutes, stirring occasionally, until everything is heated through.
- Serve hot, garnished with sliced green onions.
Notes
- For a spicier kick, add more gochujang or a sprinkle of red pepper flakes.
- You can substitute the elbow macaroni with gluten-free pasta or use different types of cheese like pepper jack for added flavor.
