- 2 tablespoons olive oil
- 1 pound potato gnocchi
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup grated Parmesan cheese, plus extra for topping
- 1 tablespoon truffle oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon red pepper flakes (optional)
- 1/2 cup breadcrumbs
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 375°F (190°C).
- In a large pot, bring salted water to a boil. Add the gnocchi and cook according to package instructions until they float to the top, about 2-3 minutes. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
- Stir in the heavy cream, 1 cup of Parmesan cheese, truffle oil, salt, black pepper, and red pepper flakes (if using). Cook for 2-3 minutes until the mixture is heated through and slightly thickened.
- Add the cooked gnocchi to the skillet and gently stir to coat them in the sauce.
- Transfer the gnocchi mixture to a greased 9×13-inch baking dish.
- In a small bowl, combine the breadcrumbs with a little olive oil and a sprinkle of salt. Mix well and then sprinkle evenly over the gnocchi. Top with additional Parmesan cheese.
- Bake in the preheated oven for 20-25 minutes, or until the top is golden and bubbly.
- Remove from the oven and let it cool for a few minutes. Garnish with chopped parsley before serving.
Notes
- For a lighter version, substitute half-and-half for heavy cream.
- Add sautéed mushrooms or spinach for extra flavor and nutrition.
