Instructions

  2. In a sizable bowl, combine the flour, baking powder, and salt, whisking them together until evenly mixed.
  3. In a separate bowl, vigorously beat the eggs and sugar until the mixture becomes airy and pale, about 3-5 minutes.
  4. Gradually blend in the coconut milk, vegetable oil, vanilla extract, and pandan extract if using, stirring until well incorporated.
