Ingredients

  • 1 cup rolled oats
  • 2 cups water or milk (dairy or non-dairy)
  • 1 cup canned pumpkin puree
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 2 tablespoons maple syrup or honey (adjust to taste)
  • 1/2 teaspoon vanilla extract
  • 1/4 cup chopped nuts (walnuts or pecans) for topping
  • 1/4 cup raisins or dried cranberries for topping

Instructions

  1. In a medium saucepan, combine the rolled oats and water or milk. Bring to a boil over medium heat, stirring occasionally.
  2. Once boiling, reduce the heat to low and add the canned pumpkin puree, cinnamon, nutmeg, and salt. Stir well to combine.
  3. Cook for about 5-7 minutes, stirring frequently, until the oats are tender and the porridge has thickened to your liking.
  4. Remove from heat and stir in the maple syrup or honey and vanilla extract.
  5. Serve warm in bowls, topped with chopped nuts and raisins or dried cranberries.

Notes

  • For a creamier texture, use all milk instead of water or a combination of both.
