- 2 cups dried plums (prunes), chopped
- 1 cup raisins
- 1 cup currants
- 1 cup all-purpose flour
- 1 teaspoon baking powder

- 1/2 teaspoon salt
- 1/2 cup brown sugar, packed
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 3 large eggs
- 1/2 cup milk
- 1/4 cup brandy
- 1/2 cup chopped walnuts or pecans (optional)
Instructions
- In a large mixing bowl, combine the chopped dried plums, raisins, and currants. Set aside.
- In another bowl, whisk together the flour, baking powder, cinnamon, nutmeg, cloves, and salt.
- In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition.
- Gradually add the dry ingredients to the butter mixture, alternating with the milk and brandy. Mix until just combined. Fold in the chopped dried fruits and nuts if using.
- Grease a 2-quart pudding mold or a heatproof bowl. Pour the batter into the prepared mold, smoothing the top.
- Cover the mold tightly with aluminum foil. Place the mold in a large pot and fill the pot with water until it reaches halfway up the sides of the mold. Bring the water to a gentle simmer and steam the pudding for about 2 to 2.5 hours, checking occasionally to ensure the water doesn’t evaporate.
- While the pudding is steaming, prepare the brandy butter sauce. In a mixing bowl, beat together the softened butter, powdered sugar, brandy, and vanilla extract until smooth and creamy. Set aside.
- Once the pudding is done steaming, carefully remove it from the pot and let it cool for about 10 minutes before unmolding onto a serving plate.
- Serve warm slices of the plum pudding drizzled with brandy butter sauce.
Notes
- For a richer flavor, soak the dried fruits in brandy or rum overnight before adding them to the batter.
- You can substitute the dried fruits with your favorites, such as dried apricots or cherries, for a different taste.
