Description

Tourtière is a traditional Québécois winter meat pie, perfect for festive gatherings.


Ingredients

  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 pound ground pork
  • 1 pound ground beef
  • 1 teaspoon dried thyme
  • 1 teaspoon dried sage
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup chicken broth
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon fresh parsley, chopped (optional)
  • 2 refrigerated pie crusts (store-bought or homemade)
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large skillet, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 5 minutes.
  3. Add the ground pork and ground beef to the skillet. Cook until browned, breaking it up with a spoon, about 8-10 minutes.
  4. Stir in the thyme, sage, cinnamon, nutmeg, salt, and pepper. Mix well to combine.
  5. Pour in the chicken broth and Worcestershire sauce. Bring to a simmer and cook for an additional 10 minutes, allowing the mixture to thicken slightly. If using, stir in the fresh parsley. Remove from heat and let cool slightly.
  6. Roll out one pie crust and fit it into a 9-inch pie pan. Fill with the meat mixture, spreading it evenly.
  7. Roll out the second pie crust and place it over the filling. Crimp the edges to seal and cut a few slits in the top to allow steam to escape.
  8. Brush the top crust with the beaten egg for a golden finish.
  9. Bake in the preheated oven for 25-30 minutes, or until the crust is golden brown.
  10. Allow the pie to cool for 10 minutes before slicing and serving.

Notes

  • For a spicier version, add a pinch of cayenne pepper or some diced jalapeños to the meat mixture.
  • You can substitute the ground meats with turkey or chicken for a lighter option.
