Description

Tournedos Rossini is a classic gourmet dish featuring tender beef steaks topped with foie gras, served on toasted French bread and drizzled with a rich Madeira sauce.


Ingredients

  • 4 beef tenderloin steaks (6 ounces each)
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil
  • 4 ounces foie gras, sliced into 4 pieces
  • 4 slices of French bread (about ½ inch thick)
  • 4 tablespoons unsalted butter
  • ½ cup Madeira wine
  • ½ cup beef stock
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season the beef tenderloin steaks generously with salt and black pepper on both sides.
  2. In a large skillet, heat the olive oil over medium-high heat. Add the steaks and sear for about 3-4 minutes on each side for medium-rare, or until your desired doneness. Remove from the skillet and let rest for 5 minutes.
  3. In the same skillet, add the foie gras slices and cook for about 1-2 minutes on each side until golden brown. Remove and set aside.
  4. In the same skillet, add the butter and let it melt. Add the slices of French bread and toast them until golden brown on both sides. Remove and set aside.
  5. Pour the Madeira wine into the skillet, scraping up any browned bits from the bottom. Allow it to simmer for 2-3 minutes until reduced by half.
  6. Add the beef stock to the skillet and continue to simmer for another 3-4 minutes until slightly thickened.
  7. To serve, place a toasted slice of bread on each plate, top with a beef tenderloin steak, and then add a piece of foie gras on top. Drizzle the Madeira sauce over the top and garnish with chopped parsley.

Notes

  • For a lighter version, substitute the foie gras with sautéed mushrooms or a rich mushroom pâté.
  • Experiment with different types of bread, such as brioche or ciabatta, for added flavor and texture.
