Ingredients

  • 1 pie crust (store-bought or homemade)
  • 1/4 cup Dijon mustard
  • 2 cups ripe tomatoes, sliced (about 3 medium tomatoes)
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon fresh Provençal herbs (such as thyme, rosemary, and oregano), chopped
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat the oven to 400°F.
  2. Roll out the pie crust and fit it into a 9-inch tart pan. Trim any excess crust hanging over the edges. Prick the bottom with a fork to prevent bubbling.
  3. Spread the Dijon mustard evenly over the bottom of the crust. Layer the sliced tomatoes on top of the mustard, slightly overlapping them.
  4. Sprinkle the shredded mozzarella and grated Parmesan cheese over the tomatoes.
  5. In a small bowl, mix the chopped Provençal herbs with salt and pepper. Sprinkle this mixture evenly over the cheese and tomatoes. Drizzle the olive oil over the top.
  6. Brush the edges of the crust with the beaten egg to give it a golden color when baked.
  7. Bake in the preheated oven for 30-35 minutes, or until the crust is golden brown and the cheese is bubbly.
  8. Let the tart cool for about 10 minutes before slicing and serving.

  • For a twist, try adding sliced olives or roasted red peppers for extra flavor.
