- 1 pie crust (store-bought or homemade)
- 1/4 cup Dijon mustard
- 2 cups ripe tomatoes, sliced (about 3 medium tomatoes)
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1 tablespoon fresh Provençal herbs (such as thyme, rosemary, and oregano), chopped
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1 egg, beaten (for egg wash)
Instructions
- Preheat the oven to 400°F.
- Roll out the pie crust and fit it into a 9-inch tart pan. Trim any excess crust hanging over the edges. Prick the bottom with a fork to prevent bubbling.
- Spread the Dijon mustard evenly over the bottom of the crust. Layer the sliced tomatoes on top of the mustard, slightly overlapping them.
- Sprinkle the shredded mozzarella and grated Parmesan cheese over the tomatoes.
- In a small bowl, mix the chopped Provençal herbs with salt and pepper. Sprinkle this mixture evenly over the cheese and tomatoes. Drizzle the olive oil over the top.
- Brush the edges of the crust with the beaten egg to give it a golden color when baked.
- Bake in the preheated oven for 30-35 minutes, or until the crust is golden brown and the cheese is bubbly.
- Let the tart cool for about 10 minutes before slicing and serving.
Notes
- For a twist, try adding sliced olives or roasted red peppers for extra flavor.
- You can also substitute the mozzarella with goat cheese for a tangy taste.
