Ingredients

  • 1/2 teaspoon salt
  • 1/4 cup cold butter, cubed
  • 34 tablespoons ice water
  • 2 medium tomatoes, sliced
  • 1 cup fresh mozzarella, sliced
  • 1/4 cup fresh basil leaves
  • Salt and pepper to taste
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix flour and salt. Cut in the cold butter until the mixture resembles coarse crumbs.
  3. Add ice water, one tablespoon at a time, until the dough comes together. Wrap in plastic and refrigerate for 30 minutes.
  4. Roll out the dough on a floured surface into a circle about 1/8 inch thick.
  5. Transfer the dough to a baking sheet lined with parchment paper.
  6. Layer the sliced tomatoes and mozzarella in the center, leaving a border around the edges.
  7. Sprinkle with fresh basil, salt, and pepper.
  8. Fold the edges of the dough over the filling, pleating as necessary.
  9. Brush the edges with the beaten egg.
  10. Bake for 25-30 minutes or until the crust is golden brown.
  11. Let cool slightly before serving.
