- 1 cup all-purpose flour
- 1/2 teaspoon salt
- 1/4 cup cold butter, cubed
- 3–4 tablespoons ice water
- 2 medium tomatoes, sliced
- 1 cup fresh mozzarella, sliced
- 1/4 cup fresh basil leaves
- Salt and pepper to taste
- 1 egg, beaten (for egg wash)
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix flour and salt. Cut in the cold butter until the mixture resembles coarse crumbs.
- Add ice water, one tablespoon at a time, until the dough comes together. Wrap in plastic and refrigerate for 30 minutes.
- Roll out the dough on a floured surface into a circle about 1/8 inch thick.
- Transfer the dough to a baking sheet lined with parchment paper.
- Layer the sliced tomatoes and mozzarella in the center, leaving a border around the edges.
- Sprinkle with fresh basil, salt, and pepper.
- Fold the edges of the dough over the filling, pleating as necessary.
- Brush the edges with the beaten egg.
- Bake for 25-30 minutes or until the crust is golden brown.
- Let cool slightly before serving.
Notes
- Feel free to add other vegetables like zucchini or bell peppers.
- Serve warm or at room temperature.
- Can be made ahead and reheated in the oven.
