Ingredients

- 2 cups ripe tomatoes, sliced
- 1 cup milk
- 3 large eggs
- 1 cup all-purpose flour
- 1/2 cup grated cheese (such as Gruyère or Parmesan)
- 1/4 cup fresh basil, chopped
- Salt and pepper to taste
- Olive oil for greasing
Instructions
- Preheat the oven to 375°F (190°C).
- Grease a tart pan with olive oil.
- Arrange the sliced tomatoes in the bottom of the tart pan.
- In a mixing bowl, whisk together the milk, eggs, flour, salt, and pepper until smooth.
- Pour the batter over the tomatoes in the tart pan.
- Sprinkle the grated cheese and chopped basil on top.
- Bake for 35-40 minutes, or until the tart is set and golden brown.
- Let it cool slightly before slicing and serving.
Notes
- Serve warm or at room temperature.
- Can be made ahead of time and reheated.
- Feel free to add other vegetables like zucchini or bell peppers.
