Ingredients

  • 2 tablespoons vegetable oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon turmeric
  • 1 medium sweet potato, peeled and cubed (about 2 cups)
  • 1 can (14 ounces) coconut milk
  • 1 cup vegetable broth
  • 1 block (14 ounces) firm tofu, drained and cubed
  • 1/2 cup creamy peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • Salt and pepper to taste
  • Fresh cilantro, for garnish

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the diced onion and sauté for about 5 minutes, or until softened.
  2. Stir in the minced garlic and grated ginger, cooking for an additional 1-2 minutes until fragrant.
  3. Add the curry powder, ground cumin, and turmeric to the pot, stirring well to coat the onions. Cook for another minute.
  4. Add the cubed sweet potato, coconut milk, and vegetable broth. Bring the mixture to a simmer and cook for about 10 minutes, or until the sweet potatoes are tender.
  5. Gently fold in the cubed tofu, peanut butter, soy sauce, and lime juice. Stir until the peanut butter is fully incorporated and the tofu is heated through, about 5 minutes.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with fresh cilantro.

Notes

  • For a spicier kick, add a diced jalapeño or a teaspoon of red pepper flakes when sautéing the onions.
  • You can substitute the sweet potato with butternut squash or carrots for a different flavor profile.
