- 2 tablespoons vegetable oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 tablespoon curry powder
- 1 teaspoon ground cumin
- 1 teaspoon turmeric
- 1 medium sweet potato, peeled and cubed (about 2 cups)
- 1 can (14 ounces) coconut milk
- 1 cup vegetable broth
- 1 block (14 ounces) firm tofu, drained and cubed
- 1/2 cup creamy peanut butter
- 2 tablespoons soy sauce
- 1 tablespoon lime juice
- Salt and pepper to taste
- Fresh cilantro, for garnish
Instructions
- Heat the vegetable oil in a large pot over medium heat. Add the diced onion and sauté for about 5 minutes, or until softened.
- Stir in the minced garlic and grated ginger, cooking for an additional 1-2 minutes until fragrant.
- Add the curry powder, ground cumin, and turmeric to the pot, stirring well to coat the onions. Cook for another minute.
- Add the cubed sweet potato, coconut milk, and vegetable broth. Bring the mixture to a simmer and cook for about 10 minutes, or until the sweet potatoes are tender.
- Gently fold in the cubed tofu, peanut butter, soy sauce, and lime juice. Stir until the peanut butter is fully incorporated and the tofu is heated through, about 5 minutes.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh cilantro.
Notes
- For a spicier kick, add a diced jalapeño or a teaspoon of red pepper flakes when sautéing the onions.
- You can substitute the sweet potato with butternut squash or carrots for a different flavor profile.
