Ingredients

- 1 cup sushi rice
- 1 1/4 cups water
- 1 tablespoon rice vinegar
- 1 tablespoon sugar
- 1/2 teaspoon salt
- 4 ounces fresh salmon, diced
- 1 avocado, sliced
- 1/2 cucumber, thinly sliced
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon sesame seeds
- Green onions, for garnish
Instructions
- Rinse the sushi rice under cold water until the water runs clear.
- In a pot, combine the rinsed rice and water, and bring to a boil.
- Once boiling, reduce heat to low, cover, and simmer for 18-20 minutes.
- In a small bowl, mix rice vinegar, sugar, and salt until dissolved.
- Once the rice is cooked, remove from heat and let it sit for 10 minutes, then fluff with a fork.
- Stir the vinegar mixture into the rice and let it cool slightly.
- In a bowl, layer the sushi rice, diced salmon, avocado, and cucumber.
- Drizzle with soy sauce and sesame oil, and sprinkle with sesame seeds and green onions.
- Serve immediately and enjoy!

- For a spicier kick, add sriracha or wasabi.
