Ingredients

  • 1 cup sushi rice
  • 1 1/4 cups water
  • 1 tablespoon rice vinegar
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 4 ounces fresh salmon, diced
  • 1 avocado, sliced
  • 1/2 cucumber, thinly sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon sesame seeds
  • Green onions, for garnish

Instructions

  1. Rinse the sushi rice under cold water until the water runs clear.
  2. In a pot, combine the rinsed rice and water, and bring to a boil.
  3. Once boiling, reduce heat to low, cover, and simmer for 18-20 minutes.
  4. In a small bowl, mix rice vinegar, sugar, and salt until dissolved.
  5. Once the rice is cooked, remove from heat and let it sit for 10 minutes, then fluff with a fork.
  6. Stir the vinegar mixture into the rice and let it cool slightly.
  7. In a bowl, layer the sushi rice, diced salmon, avocado, and cucumber.
  8. Drizzle with soy sauce and sesame oil, and sprinkle with sesame seeds and green onions.
  9. Serve immediately and enjoy!

  • For a spicier kick, add sriracha or wasabi.
