Ingredients

  • 2 medium cucumbers
  • 1 teaspoon salt
  • 2 tablespoons rice vinegar
  • 1 tablespoon sugar
  • 1 tablespoon sesame oil
  • 1 teaspoon soy sauce
  • 1 clove garlic, minced
  • 1 teaspoon sesame seeds
  • 1 green onion, chopped

Instructions

  1. Wash and slice the cucumbers into thin rounds.
  2. Sprinkle salt over the cucumbers and let them sit for about 10 minutes to draw out excess water.
  3. In a separate bowl, mix together rice vinegar, sugar, sesame oil, soy sauce, and minced garlic.
  4. After 10 minutes, rinse the cucumbers under cold water and drain well.
  5. Add the cucumbers to the dressing and toss to combine.
  6. Garnish with sesame seeds and chopped green onion before serving.
