Ingredients

- 4 medium zucchinis
- 2 tablespoons olive oil
- Salt to taste
- Pepper to taste
- Fresh herbs (such as thyme or basil) for garnish
Instructions
- Preheat the oven to 425°F (220°C).
- Wash and trim the zucchinis, then cut them into even-sized pieces.
- In a large bowl, toss the zucchini with olive oil, salt, and pepper until evenly coated.
- Spread the zucchini in a single layer on a baking sheet.
- Roast in the preheated oven for 20-25 minutes, or until tender and golden brown.
- Remove from the oven and garnish with fresh herbs before serving.
Notes
- For extra flavor, consider adding minced garlic or lemon zest.
