Description

A delicious and creamy vegan pasta dish featuring spinach and mushrooms, perfect for a wholesome meal.


Ingredients

  • 8 ounces whole grain pasta (spaghetti or penne)
  • 1 tablespoon extra virgin olive oil
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 8 ounces button mushrooms, sliced
  • 4 cups fresh baby spinach
  • 1 cup unsweetened almond milk
  • 2 tablespoons nutritional yeast
  • 1 tablespoon freshly squeezed lemon juice
  • 1 teaspoon dried oregano
  • Salt and freshly ground black pepper to taste
  • Fresh basil leaves for garnish (optional)

Instructions

  1. Begin by boiling a pot of salted water and cook the pasta according to the package instructions until it reaches an al dente texture.
  2. Once cooked, drain the pasta, reserving half a cup of the cooking water for later use.
  3. In a large skillet, warm the olive oil over medium heat.
  4. Add the chopped onion and sauté for about 3 minutes, or until it becomes soft and translucent.
  5. Introduce the minced garlic and sliced mushrooms into the skillet, cooking for an additional 5-7 minutes until the mushrooms are golden and tender.
  6. Incorporate the fresh spinach into the mixture, stirring until it wilts down, which should take about 2 minutes.
  7. Pour in the almond milk, followed by the nutritional yeast, lemon juice, and dried oregano.
  8. Mix everything well and allow the sauce to simmer gently for 3-5 minutes, stirring occasionally until it thickens slightly.
  9. If the sauce becomes too thick, gradually add the reserved pasta water until you achieve your preferred consistency.
  10. Season the sauce with salt and pepper to enhance the flavors.
  11. Add the drained pasta to the skillet, tossing it gently to ensure every strand is coated in the creamy sauce.
  12. Serve the dish hot, garnished with fresh basil leaves if desired.
