- 3 cloves garlic, minced
- 8 ounces button mushrooms, sliced
- 4 cups fresh baby spinach
- 1 cup unsweetened almond milk
- 2 tablespoons nutritional yeast
- 1 tablespoon freshly squeezed lemon juice
- 1 teaspoon dried oregano
- Salt and freshly ground black pepper to taste
- Fresh basil leaves for garnish (optional)
Instructions
- Begin by boiling a pot of salted water and cook the pasta according to the package instructions until it reaches an al dente texture.
- Once cooked, drain the pasta, reserving half a cup of the cooking water for later use.
- In a large skillet, warm the olive oil over medium heat.
- Add the chopped onion and sauté for about 3 minutes, or until it becomes soft and translucent.
- Introduce the minced garlic and sliced mushrooms into the skillet, cooking for an additional 5-7 minutes until the mushrooms are golden and tender.
- Incorporate the fresh spinach into the mixture, stirring until it wilts down, which should take about 2 minutes.
- Pour in the almond milk, followed by the nutritional yeast, lemon juice, and dried oregano.
- Mix everything well and allow the sauce to simmer gently for 3-5 minutes, stirring occasionally until it thickens slightly.
- If the sauce becomes too thick, gradually add the reserved pasta water until you achieve your preferred consistency.
- Season the sauce with salt and pepper to enhance the flavors.
- Add the drained pasta to the skillet, tossing it gently to ensure every strand is coated in the creamy sauce.
- Serve the dish hot, garnished with fresh basil leaves if desired.
