Ingredients

  • 1 cup coconut milk
  • 1 cup whole milk
  • 1 cup sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/2 cup rice flour
  • 1/2 cup all-purpose flour
  • 1 teaspoon baking powder

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8-inch square baking dish.
  2. In a medium saucepan, combine the coconut milk, whole milk, and sugar. Heat over medium heat until the sugar dissolves, stirring occasionally. Remove from heat and let it cool slightly.
  3. In a large mixing bowl, whisk together the eggs, vanilla extract, and salt until well combined. Gradually add the cooled milk mixture to the egg mixture, whisking continuously to prevent the eggs from scrambling.
  4. In another bowl, sift together the rice flour, all-purpose flour, and baking powder. Gradually add the dry ingredients to the wet mixture, stirring until smooth and well combined.
  5. Pour the custard mixture into the prepared baking dish. Place the baking dish in a larger baking pan and fill the outer pan with hot water until it reaches halfway up the sides of the custard dish.
  6. Bake for 45-50 minutes, or until the custard is set and a toothpick inserted in the center comes out clean. Remove from the oven and let it cool to room temperature before refrigerating for at least 2 hours.
  7. Cut into squares and serve chilled.

Notes

  • For a richer flavor, try adding a tablespoon of pandan extract to the custard mixture.
  • You can also top the custard with toasted coconut flakes or fresh fruit for added texture and flavor.
