Ingredients

  • 1 cup sun-dried tomatoes in oil, drained and chopped
  • 3 cups vegetable broth
  • 1 cup heavy cream
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup fresh spinach
  • ½ cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Fresh basil leaves for garnish (optional)

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the sun-dried tomatoes and sauté for 2-3 minutes until fragrant.
  2. Add the penne pasta, vegetable broth, heavy cream, garlic powder, onion powder, Italian seasoning, salt, and pepper to the skillet. Stir well to combine.
  3. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 12-15 minutes, stirring occasionally, until the pasta is cooked al dente and the liquid has thickened.
  4. Stir in the fresh spinach and Parmesan cheese until the spinach wilts and the cheese is melted.
  5. Taste and adjust seasoning if necessary. Serve hot, garnished with fresh basil leaves if desired.
