- 8 ounces penne pasta
- 1 cup sun-dried tomatoes in oil, drained and chopped
- 3 cups vegetable broth
- 1 cup heavy cream
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 cup fresh spinach
- ½ cup grated Parmesan cheese
- 2 tablespoons olive oil
- Fresh basil leaves for garnish (optional)
Instructions
- In a large skillet, heat the olive oil over medium heat. Add the sun-dried tomatoes and sauté for 2-3 minutes until fragrant.
- Add the penne pasta, vegetable broth, heavy cream, garlic powder, onion powder, Italian seasoning, salt, and pepper to the skillet. Stir well to combine.
- Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 12-15 minutes, stirring occasionally, until the pasta is cooked al dente and the liquid has thickened.
- Stir in the fresh spinach and Parmesan cheese until the spinach wilts and the cheese is melted.
- Taste and adjust seasoning if necessary. Serve hot, garnished with fresh basil leaves if desired.
Notes
- For a protein boost, add cooked chicken or shrimp during the last few minutes of cooking.
- Substitute the heavy cream with a plant-based cream for a lighter or dairy-free option.
