  • 1 cup frozen peas
  • 1/4 cup all-purpose flour
  • 2 cups seafood stock
  • 1 cup heavy cream
  • 1 teaspoon Old Bay seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon fresh parsley, chopped
  • 1 package (14 ounces) refrigerated pie crusts (2 crusts)
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat your oven to 400°F.
  2. In a large skillet, combine the olive oil and butter over medium heat.
  3. Add the diced onion and minced garlic, sautéing until the onion turns translucent, about 3-4 minutes.
  4. Add the diced carrots and celery, cooking for an additional 5 minutes until they soften slightly.
  5. Sprinkle the flour over the vegetable mixture and stir for 1-2 minutes to create a roux.
  6. Gradually pour in the seafood stock and heavy cream, whisking continuously until the mixture thickens, about 5-7 minutes.
  7. Fold in the chopped lobster, Old Bay seasoning, salt, pepper, lemon juice, and parsley, mixing thoroughly before removing from heat.
  8. Take one pie crust and lay it into a 9-inch pie dish, then pour the lobster filling into the crust.
  9. Cover with the second pie crust, sealing the edges by crimping with a fork or your fingers.
  10. Cut several slits in the top crust to allow steam to escape, then brush the surface with the beaten egg.
  11. Bake the pie in the preheated oven for 25-30 minutes, or until the crust is golden brown and the filling is bubbling.
  12. Allow the pie to cool for about 10 minutes before slicing and serving.
