- 1 package (14 ounces) refrigerated pie crusts (2 crusts)
- 1 egg, beaten (for egg wash)
Instructions
- Preheat your oven to 400°F.
- In a large skillet, combine the olive oil and butter over medium heat.
- Add the diced onion and minced garlic, sautéing until the onion turns translucent, about 3-4 minutes.
- Add the diced carrots and celery, cooking for an additional 5 minutes until they soften slightly.
- Sprinkle the flour over the vegetable mixture and stir for 1-2 minutes to create a roux.
- Gradually pour in the seafood stock and heavy cream, whisking continuously until the mixture thickens, about 5-7 minutes.
- Fold in the chopped lobster, Old Bay seasoning, salt, pepper, lemon juice, and parsley, mixing thoroughly before removing from heat.
- Take one pie crust and lay it into a 9-inch pie dish, then pour the lobster filling into the crust.
- Cover with the second pie crust, sealing the edges by crimping with a fork or your fingers.
- Cut several slits in the top crust to allow steam to escape, then brush the surface with the beaten egg.
- Bake the pie in the preheated oven for 25-30 minutes, or until the crust is golden brown and the filling is bubbling.
- Allow the pie to cool for about 10 minutes before slicing and serving.
