- 2 medium butternut squashes, halved and seeds removed
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup cooked quinoa
- 1 can (13.5 ounces) coconut milk
- 2 tablespoons green curry paste
- 1 cup diced bell peppers (red, yellow, or green)
- 1 cup diced zucchini
- 1 cup chopped spinach
- 1 tablespoon soy sauce
- 1 tablespoon lime juice
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped green onions
Instructions
- Preheat the oven to 400°F.
- Place the butternut squash halves cut-side up on a baking sheet.
- Drizzle with olive oil and sprinkle with salt and pepper.
- Roast in the oven for 30-35 minutes, or until tender.
- In a large skillet over medium heat, combine coconut milk and green curry paste. Stir until well mixed and simmer for 5 minutes.
- Add the diced bell peppers, zucchini, and spinach to the skillet. Cook for an additional 5-7 minutes, until the vegetables are tender.
- Stir in the cooked quinoa, soy sauce, lime juice, cilantro, and green onions. Mix until everything is well combined and heated through.
- Remove the roasted squash from the oven and carefully spoon the green curry mixture into each half of the butternut squash, filling them generously.
- Return the stuffed squash to the oven and bake for an additional 10 minutes.
- Remove and let cool slightly before serving.
Notes
- For added flavor, top with crushed peanuts or cashews before serving.
- For a spicier kick, add sliced jalapeños to the filling mixture.
- You can substitute the quinoa with brown rice or farro for a different texture.
