  • 2 medium butternut squashes, halved and seeds removed
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup cooked quinoa
  • 1 can (13.5 ounces) coconut milk
  • 2 tablespoons green curry paste
  • 1 cup diced bell peppers (red, yellow, or green)
  • 1 cup diced zucchini
  • 1 cup chopped spinach
  • 1 tablespoon soy sauce
  • 1 tablespoon lime juice
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped green onions

Instructions

  1. Preheat the oven to 400°F.
  2. Place the butternut squash halves cut-side up on a baking sheet.
  3. Drizzle with olive oil and sprinkle with salt and pepper.
  4. Roast in the oven for 30-35 minutes, or until tender.
  5. In a large skillet over medium heat, combine coconut milk and green curry paste. Stir until well mixed and simmer for 5 minutes.
  6. Add the diced bell peppers, zucchini, and spinach to the skillet. Cook for an additional 5-7 minutes, until the vegetables are tender.
  7. Stir in the cooked quinoa, soy sauce, lime juice, cilantro, and green onions. Mix until everything is well combined and heated through.
  8. Remove the roasted squash from the oven and carefully spoon the green curry mixture into each half of the butternut squash, filling them generously.
  9. Return the stuffed squash to the oven and bake for an additional 10 minutes.
  10. Remove and let cool slightly before serving.

  • For added flavor, top with crushed peanuts or cashews before serving.
  • For a spicier kick, add sliced jalapeños to the filling mixture.
