  • 1 tablespoon lime juice
  • 1 tablespoon cornstarch
  • Fresh cilantro, for garnish

Instructions

  1. Rinse the jasmine rice thoroughly under cold water until it runs clear, then drain it well.
  2. In a saucepan, combine the rinsed rice with coconut milk, water, sugar, and salt, adding the finely chopped lemongrass.
  3. Bring the mixture to a boil over medium heat, then lower the heat, cover, and let it simmer gently for 15-20 minutes until the rice absorbs the liquid and becomes tender.
  4. Remove from heat and allow it to rest, still covered, for another 10 minutes before fluffing it with a fork.
  5. Incorporate the lime zest, lime juice, and cornstarch into the rice mixture, ensuring everything is well blended.
  6. Prepare a 9×9-inch baking dish by greasing it, then evenly spread the rice mixture into the dish, pressing it down firmly to compact it.
  7. Cover the dish with plastic wrap and refrigerate for a minimum of 2 hours or until it sets.
  8. Once chilled, cut the rice into squares or rectangles.
  9. Heat a non-stick skillet over medium heat and carefully pan-fry the rice cakes for about 3-4 minutes on each side until they achieve a lovely golden brown color.
