  • 1 pound ground chicken
  • 1 tablespoon vegetable oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 red bell pepper, diced
  • 1 cup snap peas, trimmed and halved
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon brown sugar
  • 1/2 teaspoon red pepper flakes (adjust to taste)
  • 1 cup fresh Thai basil leaves, chopped
  • 1/2 cup roasted cashews, roughly chopped
  • 1 head of butter lettuce or romaine lettuce, leaves separated

Instructions

  1. In a large skillet, heat the vegetable oil over medium heat. Add the minced garlic and ginger, sautéing for about 1 minute until fragrant.
  2. Add the ground chicken to the skillet, breaking it apart with a spatula. Cook until browned and cooked through, about 5-7 minutes.
  3. Stir in the diced red bell pepper and snap peas, cooking for an additional 3-4 minutes until the vegetables are tender-crisp.
  4. In a small bowl, mix together the soy sauce, oyster sauce, fish sauce, brown sugar, and red pepper flakes. Pour this sauce over the chicken and vegetables, stirring to combine. Cook for another 2-3 minutes until heated through.
  5. Remove the skillet from heat and fold in the chopped Thai basil and roasted cashews.
  6. To serve, spoon the chicken mixture into the lettuce leaves, creating little boats.

Notes

  • For a spicier kick, add sliced fresh chili peppers to the chicken mixture.
