- 1 cup vital wheat gluten
- 1/4 cup nutritional yeast
- 1/4 cup ground flaxseed
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 1/4 teaspoon cayenne pepper (optional)
- 1/2 cup vegetable broth
- 1/4 cup soy sauce
- 2 tablespoons olive oil
- 1 tablespoon maple syrup
Instructions
- In a large mixing bowl, combine the vital wheat gluten, nutritional yeast, ground flaxseed, smoked paprika, garlic powder, onion powder, black pepper, salt, and cayenne pepper (if using). Mix well until all dry ingredients are evenly distributed.
- In a separate bowl, whisk together the vegetable broth, soy sauce, olive oil, and maple syrup.
- Pour the wet ingredients into the dry ingredients and stir until a dough forms. Knead the dough for about 3-5 minutes until it becomes elastic.
- Shape the dough into a log, about 6 inches long, and wrap it tightly in aluminum foil, twisting the ends to secure.
- Place the wrapped log in a steamer basket over boiling water. Cover and steam for 30-40 minutes, ensuring the water doesn’t run dry.
- Once cooked, remove the salami from the steamer and let it cool for at least 15 minutes before unwrapping.
- Slice and serve as desired, or refrigerate for up to a week for enhanced flavor.

- For a spicier version, add more cayenne pepper or include red pepper flakes.
