Description

Tartiflette is a savory French casserole made with potatoes, bacon, and creamy cheese, perfect for a comforting meal.


Ingredients

  • 2 pounds Yukon Gold potatoes, peeled and cut into thin rounds
  • 8 ounces diced pancetta or thick-cut bacon
  • 1 medium onion, finely sliced
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 teaspoon sea salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup dry white wine, such as Chardonnay
  • 1 pound creamy Reblochon cheese, sliced (or substitute with Brie or Camembert)
  • Fresh parsley, chopped for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large saucepan, bring salted water to a boil and add the potato rounds. Parboil them for about 10 minutes until they are just tender, then drain and set aside.
  3. In a skillet over medium heat, cook the pancetta until it becomes crispy, about 5-7 minutes.
  4. Add the sliced onion to the skillet and sauté until translucent, about 4-5 minutes. Stir in the minced garlic and cook for an additional minute.
  5. In a large bowl, combine the parboiled potatoes, pancetta and onion mixture, heavy cream, sea salt, black pepper, nutmeg, and white wine. Fold the ingredients together until the potatoes are evenly coated.
  6. Pour the mixture into a greased 9×13-inch baking dish, ensuring an even spread.
  7. Layer the slices of Reblochon cheese on top, covering the entire surface.
  8. Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and golden.
  9. Allow it to rest for a few minutes before serving, and finish with a sprinkle of chopped parsley for garnish.

Notes

  • For a meatless alternative, swap the pancetta for sautéed mushrooms and add fresh spinach.
