- 2 pounds Yukon Gold potatoes, peeled and cut into thin rounds
- 8 ounces diced pancetta or thick-cut bacon
- 1 medium onion, finely sliced
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1 teaspoon sea salt
- 1/2 teaspoon freshly ground black pepper
- 1/4 teaspoon ground nutmeg
- 1/2 cup dry white wine, such as Chardonnay
- 1 pound creamy Reblochon cheese, sliced (or substitute with Brie or Camembert)
- Fresh parsley, chopped for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- In a large saucepan, bring salted water to a boil and add the potato rounds. Parboil them for about 10 minutes until they are just tender, then drain and set aside.
- In a skillet over medium heat, cook the pancetta until it becomes crispy, about 5-7 minutes.
- Add the sliced onion to the skillet and sauté until translucent, about 4-5 minutes. Stir in the minced garlic and cook for an additional minute.
- In a large bowl, combine the parboiled potatoes, pancetta and onion mixture, heavy cream, sea salt, black pepper, nutmeg, and white wine. Fold the ingredients together until the potatoes are evenly coated.
- Pour the mixture into a greased 9×13-inch baking dish, ensuring an even spread.
- Layer the slices of Reblochon cheese on top, covering the entire surface.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and golden.
- Allow it to rest for a few minutes before serving, and finish with a sprinkle of chopped parsley for garnish.

- For a meatless alternative, swap the pancetta for sautéed mushrooms and add fresh spinach.
