Tangy pickle margarita pops with a Tajín rim are a refreshing and unique treat perfect for hot days.
Ingredients

- ½ cup pickle juice (dill or sweet, your choice)
- ½ cup fresh lime juice
- ⅓ cup agave syrup or honey (adjust to taste)
- ½ cup water
- Optional: a splash of orange juice or non-alcoholic triple sec
- Optional: 1–2 tbsp tequila (if making adult version)
- Tajín (or chili-lime seasoning) for finishing
- Extra lime juice (for rimming)
Instructions
- In a pitcher or bowl, stir together pickle juice, lime juice, agave syrup, and water. Add tequila or orange juice if using. Taste and adjust sweetness or tartness to your liking.
- Pour the mixture into popsicle molds. Freeze for at least 6 hours, or overnight, until fully solid.
- When ready to serve, quickly dip the tip or side of the popsicle into lime juice, then press into Tajín to coat.
Notes
- Adjust the sweetness of the popsicles according to your taste preference.
- For a non-alcoholic version, omit the tequila.
