- 400g large prawns, peeled and deveined
- 2 tbsp tamarind paste
- 1 tbsp soy sauce
- 1 tbsp honey
- 1 garlic clove, minced
- 1 tsp grated ginger
- 1 tbsp vegetable oil
- 150g thin rice noodles or vermicelli
- Vegetable oil for frying
- 1 cup fresh cilantro, chopped
- 1 garlic clove, minced
- Zest of 1 lime
- 1 tbsp olive oil
- Salt to taste
Instructions
- Prepare crispy noodle nests: Cook noodles according to package instructions until just soft. Drain well. Heat oil in a frying pan. Place small nests of noodles in hot oil and fry until golden and crisp. Drain on paper towels.
- Marinate and cook prawns: Mix tamarind paste, soy sauce, honey, garlic, and ginger in a bowl. Add prawns and marinate for 15-20 minutes. Heat oil in a skillet and cook prawns until pink and cooked through, about 2-3 minutes per side.
- Make cilantro gremolata: Mix chopped cilantro, garlic, lime zest, olive oil, and salt in a small bowl.
- Assemble: Place crispy noodle nests on plates, top with tamarind prawns, and drizzle with cilantro gremolata.
