Description

A delightful dish featuring tamarind prawns served on crispy noodle nests, topped with a fresh cilantro gremolata.


Ingredients

  • 400g large prawns, peeled and deveined
  • 2 tbsp tamarind paste
  • 1 tbsp soy sauce
  • 1 tbsp honey
  • 1 garlic clove, minced
  • 1 tsp grated ginger
  • 1 tbsp vegetable oil
  • 150g thin rice noodles or vermicelli
  • Vegetable oil for frying
  • 1 cup fresh cilantro, chopped
  • 1 garlic clove, minced
  • Zest of 1 lime
  • 1 tbsp olive oil
  • Salt to taste

Instructions

  1. Prepare crispy noodle nests: Cook noodles according to package instructions until just soft. Drain well. Heat oil in a frying pan. Place small nests of noodles in hot oil and fry until golden and crisp. Drain on paper towels.
  2. Marinate and cook prawns: Mix tamarind paste, soy sauce, honey, garlic, and ginger in a bowl. Add prawns and marinate for 15-20 minutes. Heat oil in a skillet and cook prawns until pink and cooked through, about 2-3 minutes per side.
  3. Make cilantro gremolata: Mix chopped cilantro, garlic, lime zest, olive oil, and salt in a small bowl.
  4. Assemble: Place crispy noodle nests on plates, top with tamarind prawns, and drizzle with cilantro gremolata.
