Ingredients
Scale
- 1 large head of cauliflower
- 3 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup tahini
- 2 tablespoons lemon juice
- 2 tablespoons water
- 1 tablespoon maple syrup (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 425°F.
- Line a baking sheet with parchment paper.
- Remove the leaves from the cauliflower and slice it into 3/4-inch thick steaks.
- In a small bowl, whisk together the olive oil, garlic powder, paprika, salt, and black pepper.
- Brush both sides of the cauliflower steaks with the olive oil mixture and place them on the prepared baking sheet.
- Roast the cauliflower steaks in the preheated oven for 25-30 minutes, flipping halfway through, until they are golden brown and tender.
- While the cauliflower is roasting, prepare the tahini drizzle by whisking together the tahini, lemon juice, water, and maple syrup (if using) until smooth.
- Adjust the consistency of the tahini drizzle with more water if needed.
- Once the cauliflower is done, remove it from the oven and drizzle the tahini sauce over the steaks.
- Garnish with chopped parsley before serving.
Notes
- For a spicier kick, add a pinch of cayenne pepper to the olive oil mixture.
- You can substitute the tahini with almond butter for a different flavor profile.
