  • 1 packet taco seasoning
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 cup salsa
  • 1 cup shredded cheese
  • 1 box cornbread mix
  • 1 egg
  • 1/3 cup milk

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a skillet, brown the ground beef over medium heat and drain excess fat.
  3. Add taco seasoning, black beans, corn, and salsa to the skillet. Stir to combine and heat through.
  4. In a separate bowl, prepare the cornbread mix according to package instructions, adding the egg and milk.
  5. Spread the beef mixture in a greased casserole dish.
  6. Pour the cornbread batter over the beef mixture and spread evenly.
  7. Sprinkle shredded cheese on top.
  8. Bake in the preheated oven for 25-30 minutes or until the cornbread is golden brown.
