- 1 lb ground beef
- 1 packet taco seasoning
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 cup salsa
- 1 cup shredded cheese
- 1 box cornbread mix
- 1 egg
- 1/3 cup milk
Instructions
- Preheat the oven to 400°F (200°C).
- In a skillet, brown the ground beef over medium heat and drain excess fat.
- Add taco seasoning, black beans, corn, and salsa to the skillet. Stir to combine and heat through.
- In a separate bowl, prepare the cornbread mix according to package instructions, adding the egg and milk.
- Spread the beef mixture in a greased casserole dish.
- Pour the cornbread batter over the beef mixture and spread evenly.
- Sprinkle shredded cheese on top.
- Bake in the preheated oven for 25-30 minutes or until the cornbread is golden brown.
- Let cool for a few minutes before serving.
Notes
- Feel free to add your favorite taco toppings like sour cream or avocado.
- This dish can be made ahead of time and reheated.
- For a spicier version, add jalapeños to the beef mixture.
