Ingredients
Scale
- 1 pound ground beef
- 1 tablespoon taco seasoning
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup diced green onions
- 4 large lettuce leaves (for wrapping)
- 1/2 cup diced tomatoes (optional)
- Salt and pepper to taste
Instructions
- In a skillet over medium heat, cook the ground beef until browned, about 5-7 minutes. Drain excess fat if necessary.
- Stir in the taco seasoning and a splash of water (about 2 tablespoons). Cook for an additional 2-3 minutes until well combined and heated through. Season with salt and pepper to taste.
- Remove the skillet from heat and stir in the shredded cheddar cheese until melted.
- Lay out the large lettuce leaves on a clean surface. Spoon the beef mixture evenly onto each leaf.
- Top with sour cream, diced green onions, and diced tomatoes if using.
- Carefully wrap the lettuce leaves around the filling to create a burrito shape.
- Serve immediately with keto-friendly sides like pork rinds, celery sticks, or cucumber slices.
Notes
- For added flavor, mix in some diced jalapeños or avocado to the beef mixture.
- Substitute ground turkey or chicken for the beef for a lighter option.
