Ingredients

  • 1 cup pineapple chunks
  • 1/2 cup bell pepper, diced
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon olive oil
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, minced
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced chicken and cook until browned and cooked through.
  3. Stir in garlic and ginger, cooking for an additional minute.
  4. Add bell pepper and pineapple chunks, cooking until the bell pepper is tender.
  5. In a small bowl, mix soy sauce and honey, then pour over the chicken mixture.
  6. Stir to combine and let simmer for 5 minutes.
  7. Serve over cooked rice and enjoy!
