Ingredients

- 2 cups cooked rice
- 1 lb chicken breast, diced
- 1 cup pineapple chunks
- 1/2 cup bell pepper, diced
- 1/4 cup soy sauce
- 2 tablespoons honey
- 1 tablespoon olive oil
- 1 teaspoon garlic, minced
- 1 teaspoon ginger, minced
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add diced chicken and cook until browned and cooked through.
- Stir in garlic and ginger, cooking for an additional minute.
- Add bell pepper and pineapple chunks, cooking until the bell pepper is tender.
- In a small bowl, mix soy sauce and honey, then pour over the chicken mixture.
- Stir to combine and let simmer for 5 minutes.
- Serve over cooked rice and enjoy!

- For a spicier version, add red pepper flakes.
