- 1/2 cup unsweetened cocoa powder
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 tablespoon red food coloring
- 1 teaspoon vanilla extract
- 1/2 cup chocolate chips (optional)
- 1/2 cup cream cheese frosting (for topping)
Instructions
- Preheat your oven to 350°F (175°C) and line a mini muffin tin with paper liners or spray with non-stick cooking spray.
- In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking powder, and salt until well combined.
- In a separate bowl, mix the melted butter, eggs, red food coloring, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and stir until just combined. If using, fold in the chocolate chips.
- Spoon the batter into the prepared mini muffin tin, filling each cup about 2/3 full.
- Bake for 12-15 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
- Allow the brownie bites to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
- Once cooled, top each brownie bite with a small dollop of cream cheese frosting.
Notes
- For a festive touch, add sprinkles on top of the cream cheese frosting.
- Substitute the cream cheese frosting with a simple dusting of powdered sugar for a lighter option.
