- 2 large sweet potatoes (about 2 pounds)
- 1/4 cup brown sugar
- 1/4 cup unsalted butter, melted
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon salt
- 1 cup mini marshmallows
- 1/4 cup chopped pecans (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Wash and peel the sweet potatoes, then cut them into 1-inch cubes.
- In a large pot, bring water to a boil and add the sweet potato cubes. Cook for about 15 minutes or until tender. Drain and set aside.
- In a large mixing bowl, combine the melted butter, brown sugar, cinnamon, nutmeg, and salt. Stir until well mixed.
- Add the cooked sweet potatoes to the bowl and gently mash them until smooth but still slightly chunky.
- Spread the sweet potato mixture evenly in a greased 9×13 inch baking dish.
- Top the sweet potatoes with mini marshmallows and sprinkle chopped pecans on top if using.
- Bake in the preheated oven for 20-25 minutes, or until the marshmallows are golden brown and slightly toasted.
- Remove from the oven and let cool for a few minutes before serving.
Notes
- For a healthier option, reduce the brown sugar to 2 tablespoons and use a sugar substitute.
- Add a splash of orange juice or maple syrup to the sweet potato mixture for a different flavor profile.
