  • 2 large sweet potatoes (about 2 pounds)
  • 1/4 cup brown sugar
  • 1/4 cup unsalted butter, melted
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1 cup mini marshmallows
  • 1/4 cup chopped pecans (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Wash and peel the sweet potatoes, then cut them into 1-inch cubes.
  3. In a large pot, bring water to a boil and add the sweet potato cubes. Cook for about 15 minutes or until tender. Drain and set aside.
  4. In a large mixing bowl, combine the melted butter, brown sugar, cinnamon, nutmeg, and salt. Stir until well mixed.
  5. Add the cooked sweet potatoes to the bowl and gently mash them until smooth but still slightly chunky.
  6. Spread the sweet potato mixture evenly in a greased 9×13 inch baking dish.
  7. Top the sweet potatoes with mini marshmallows and sprinkle chopped pecans on top if using.
  8. Bake in the preheated oven for 20-25 minutes, or until the marshmallows are golden brown and slightly toasted.
  9. Remove from the oven and let cool for a few minutes before serving.

Notes

  • For a healthier option, reduce the brown sugar to 2 tablespoons and use a sugar substitute.
  • Add a splash of orange juice or maple syrup to the sweet potato mixture for a different flavor profile.
