A comforting and delicious Sweet Potato & Spicy Sausage Gratin that combines layers of sweet potatoes with spicy Italian sausage and creamy cheese.

- 2 large sweet potatoes, peeled and thinly sliced (about 4 cups)
- 1 pound spicy Italian sausage, casings removed
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1 cup shredded sharp cheddar cheese
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon red pepper flakes (optional for extra heat)
- 1 tablespoon olive oil
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat the oven to 375°F.
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook until translucent, about 5 minutes.
- Add the minced garlic and cook for an additional minute until fragrant.
- Add the spicy sausage to the skillet, breaking it apart with a spoon. Cook until browned and cooked through, about 7-10 minutes. Drain excess fat if necessary.
- In a large bowl, combine the heavy cream, smoked paprika, salt, black pepper, and red pepper flakes (if using). Stir in the cooked sausage mixture.
- In a greased 9×13-inch baking dish, layer half of the sweet potato slices evenly across the bottom.
- Pour half of the sausage and cream mixture over the sweet potatoes. Repeat with the remaining sweet potatoes and sausage mixture.
- Cover the dish with aluminum foil and bake for 30 minutes.
- Remove the foil, sprinkle the shredded cheddar cheese on top, and bake uncovered for an additional 20-25 minutes, or until the sweet potatoes are tender and the cheese is bubbly and golden.
- Let the gratin cool for 5-10 minutes before serving. Garnish with chopped parsley.
