A nutritious and delicious bowl featuring roasted sweet potatoes, quinoa, and pomegranate seeds, perfect for healthy eating.


Ingredients

  • 2 medium sweet potatoes, peeled and diced into 1-inch cubes
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup quinoa, rinsed
  • 2 cups vegetable broth or water
  • 1 cup pomegranate seeds
  • 1 cup baby spinach or arugula
  • 1/4 cup crumbled feta cheese (optional)
  • 1/4 cup chopped walnuts or pecans (optional)
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey or maple syrup

Instructions

  1. Preheat the oven to 425°F.
  2. Toss the diced sweet potatoes with olive oil, cumin, paprika, salt, and pepper in a large bowl until well coated.
  3. Spread the sweet potatoes on a baking sheet in a single layer and roast for 25-30 minutes, flipping halfway through.
  4. While the sweet potatoes are roasting, cook the quinoa by combining the rinsed quinoa and vegetable broth (or water) in a medium saucepan.
  5. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes, or until the quinoa is fluffy and the liquid is absorbed.
  6. Remove from heat and let it sit covered for 5 minutes, then fluff with a fork.
  7. In a large bowl, combine the cooked quinoa, roasted sweet potatoes, pomegranate seeds, and baby spinach (or arugula).
  8. Drizzle with balsamic vinegar and honey (or maple syrup), and toss gently to combine.
  9. If desired, top with crumbled feta cheese and chopped walnuts or pecans.
  10. Serve immediately or chill in the refrigerator for up to 2 days.

Notes

  • For added flavor, try adding a pinch of cinnamon to the sweet potatoes before roasting.
  • You can substitute the quinoa with farro or brown rice for a different grain base.
