Description
A creamy and delicious Sweet Potato and Groundnut Mash that combines the sweetness of sweet potatoes with the nuttiness of roasted peanuts.

- 2 large sweet potatoes (about 2 pounds), peeled and cubed
- 1 cup roasted unsalted peanuts
- 1/4 cup unsweetened coconut milk
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon ground cumin
- Salt and pepper to taste
- Chopped fresh cilantro for garnish (optional)
Instructions
- In a large pot, bring water to a boil. Add the cubed sweet potatoes and cook until tender, about 15-20 minutes. Drain and return to the pot.
- Add the roasted peanuts, coconut milk, olive oil, garlic powder, ground cumin, salt, and pepper to the sweet potatoes.
- Mash the mixture using a potato masher or fork until smooth and creamy. Adjust seasoning to taste.
- If the mash is too thick, add more coconut milk a tablespoon at a time until desired consistency is reached.
- Serve warm, garnished with chopped fresh cilantro if desired.
Notes
- For a spicier kick, add a pinch of cayenne pepper or a dash of hot sauce to the mash.
- You can substitute the peanuts with almond butter or sunflower seed butter for a different flavor profile or to accommodate nut allergies.
