Description

A creamy and delicious Sweet Potato and Groundnut Mash that combines the sweetness of sweet potatoes with the nuttiness of roasted peanuts.


Ingredients

  • 2 large sweet potatoes (about 2 pounds), peeled and cubed
  • 1 cup roasted unsalted peanuts
  • 1/4 cup unsweetened coconut milk
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • Chopped fresh cilantro for garnish (optional)

Instructions

  1. In a large pot, bring water to a boil. Add the cubed sweet potatoes and cook until tender, about 15-20 minutes. Drain and return to the pot.
  2. Add the roasted peanuts, coconut milk, olive oil, garlic powder, ground cumin, salt, and pepper to the sweet potatoes.
  3. Mash the mixture using a potato masher or fork until smooth and creamy. Adjust seasoning to taste.
  4. If the mash is too thick, add more coconut milk a tablespoon at a time until desired consistency is reached.
  5. Serve warm, garnished with chopped fresh cilantro if desired.

Notes

  • For a spicier kick, add a pinch of cayenne pepper or a dash of hot sauce to the mash.
  • You can substitute the peanuts with almond butter or sunflower seed butter for a different flavor profile or to accommodate nut allergies.
