- 2 medium sweet potatoes, peeled and cut into thin noodles
- 8 ounces rice noodles
- 2 tablespoons gochujang (Korean chili paste)
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon honey or maple syrup
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 1 cup snap peas, trimmed
- 1 red bell pepper, thinly sliced
- 2 green onions, chopped
- 1 tablespoon sesame seeds (optional)
- Fresh cilantro for garnish (optional)
Instructions
- Cook the rice noodles according to package instructions. Drain and set aside.
- In a large skillet, heat the sesame oil over medium heat. Add the minced garlic and ginger, sautéing for about 1 minute until fragrant.
- Add the sweet potato noodles to the skillet and cook for 5-7 minutes, stirring frequently, until they are tender but still slightly firm.
- Stir in the snap peas and red bell pepper, cooking for an additional 3-4 minutes until the vegetables are bright and tender.
- In a small bowl, whisk together the gochujang, soy sauce, and honey (or maple syrup). Pour this sauce over the sweet potato and vegetable mixture, tossing to coat evenly.
- Add the cooked rice noodles to the skillet, gently tossing everything together until well combined and heated through.
- Serve immediately, garnished with chopped green onions, sesame seeds, and fresh cilantro if desired.
Notes
- For added protein, consider adding cooked chicken, shrimp, or tofu to the dish.
- For a spicier kick, increase the amount of gochujang or add a sprinkle of red pepper flakes.
