Description

Ingredients

  • 45 large sweet potatoes
  • 1/2 cup melted butter
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1/4 cup milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • Pecan Topping:
    • 1/2 cup brown sugar
    • 1/3 cup all-purpose flour
    • 1/3 cup melted butter
    • 1 cup chopped pecans

Instructions

  • Preheat oven to 350°F.
  • Boil or steam sweet potatoes until tender. Mash and mix with butter, brown sugar, eggs, milk, vanilla, cinnamon, and nutmeg.
  • Spread sweet potato mixture in a greased 9×13-inch baking dish.
  • Prepare pecan topping by combining brown sugar, flour, butter, and pecans.
  • Sprinkle topping over sweet potatoes and bake for 30-35 minutes until golden.

Notes

  • To add a marshmallow topping, layer mini marshmallows on top during the last 10 minutes of baking.
  • Make ahead by preparing the sweet potato mixture and topping separately, then assemble and bake when ready.
