Ingredients

  • 1 pound ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup finely chopped onion
  • 1/4 cup chopped fresh parsley
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon cornstarch

Instructions

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. In a large bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, onion, parsley, egg, garlic, salt, pepper, oregano, and paprika. Mix until well combined.
  3. Shape the mixture into meatballs, about 1 inch in diameter, and place them on the prepared baking sheet.
  4. Bake the meatballs in the preheated oven for 20-25 minutes, or until they are cooked through and golden brown.
  5. While the meatballs are baking, prepare the sauce by combining honey, soy sauce, apple cider vinegar, sesame oil, and cornstarch in a small saucepan. Heat over medium heat, stirring constantly until the sauce thickens, about 3-5 minutes.
  6. Once the meatballs are done, remove them from the oven and drizzle the sauce over them, tossing gently to coat.
  7. Serve warm, garnished with additional parsley if desired.

Notes

  • For a spicier kick, add 1 teaspoon of red pepper flakes to the meatball mixture.
  • For a sweeter sauce, increase the honey to 1/3 cup.
