Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 large eggs
  • 1/2 cup milk
  • 1/4 cup chopped fresh chives
  • 1/4 cup grated Parmesan cheese
  • Vegetable oil for frying

Instructions

  1. In a large mixing bowl, combine the flour, baking powder, salt, and black pepper. Mix well to combine.
  2. In another bowl, whisk together the eggs and milk until smooth.
  3. Pour the egg mixture into the dry ingredients and stir until just combined.
  4. Gently fold in the sweet corn, chopped chives, and grated Parmesan cheese until evenly distributed.
  5. Heat about 1/4 inch of vegetable oil in a large skillet over medium heat.
  6. Once the oil is hot, drop spoonfuls of the batter into the skillet, flattening them slightly with the back of the spoon.
  7. Cook for about 3-4 minutes on each side, or until golden brown and crispy.
  8. Remove the fritters from the skillet and place them on a paper towel-lined plate to drain excess oil.
  9. Serve warm with your favorite dipping sauce or a dollop of sour cream.

  • For a spicy kick, add 1/4 teaspoon of cayenne pepper to the batter.
