- 2 cups fresh or frozen sweet corn, drained if canned
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 large eggs
- 1/2 cup milk
- 1/4 cup chopped fresh chives
- 1/4 cup grated Parmesan cheese
- Vegetable oil for frying
Instructions
- In a large mixing bowl, combine the flour, baking powder, salt, and black pepper. Mix well to combine.
- In another bowl, whisk together the eggs and milk until smooth.
- Pour the egg mixture into the dry ingredients and stir until just combined.
- Gently fold in the sweet corn, chopped chives, and grated Parmesan cheese until evenly distributed.
- Heat about 1/4 inch of vegetable oil in a large skillet over medium heat.
- Once the oil is hot, drop spoonfuls of the batter into the skillet, flattening them slightly with the back of the spoon.
- Cook for about 3-4 minutes on each side, or until golden brown and crispy.
- Remove the fritters from the skillet and place them on a paper towel-lined plate to drain excess oil.
- Serve warm with your favorite dipping sauce or a dollop of sour cream.
Notes
- For a spicy kick, add 1/4 teaspoon of cayenne pepper to the batter.
- Try substituting the chives with fresh cilantro or green onions for a different flavor profile.
