Description

Delicious Sweet Cheese Konafa Rolls filled with a creamy cheese mixture and topped with pistachio dust.


Ingredients

  • 8 ounces of shredded phyllo dough (konafa)
  • 4 ounces of unsalted butter, melted
  • 8 ounces of ricotta cheese
  • 4 ounces of mozzarella cheese, shredded
  • 1/2 cup of powdered sugar
  • 1 teaspoon of vanilla extract
  • 1/4 cup of milk
  • 1/2 cup of crushed pistachios
  • 1/4 cup of honey
  • 1/4 teaspoon of cinnamon

Instructions

  1. Preheat your oven to 375°F.
  2. In a large bowl, combine the ricotta cheese, mozzarella cheese, powdered sugar, vanilla extract, and milk. Mix until smooth and creamy. Set aside.
  3. Take the shredded phyllo dough and separate it gently. Brush a baking sheet with some melted butter. Lay out about 1/4 of the phyllo dough on the sheet and brush it with more melted butter.
  4. Place a generous spoonful of the cheese mixture along one edge of the phyllo dough. Roll it up tightly to form a log. Repeat this process with the remaining dough and cheese mixture.
  5. Arrange the rolls on the baking sheet and brush the tops with the remaining melted butter. Bake in the preheated oven for 25-30 minutes, or until golden brown and crispy.
  6. While the rolls are baking, mix the crushed pistachios and cinnamon in a small bowl.
  7. Once the rolls are done, remove them from the oven and drizzle with honey. Sprinkle the pistachio mixture over the top while they are still warm.

Notes

  • For a richer flavor, try adding a tablespoon of orange blossom water to the cheese mixture.
  • You can also substitute the pistachios with finely chopped almonds or walnuts for a different nutty flavor.
