Description
Delicious Sweet Cheese Konafa Rolls filled with a creamy cheese mixture and topped with pistachio dust.

- 8 ounces of shredded phyllo dough (konafa)
- 4 ounces of unsalted butter, melted
- 8 ounces of ricotta cheese
- 4 ounces of mozzarella cheese, shredded
- 1/2 cup of powdered sugar
- 1 teaspoon of vanilla extract
- 1/4 cup of milk
- 1/2 cup of crushed pistachios
- 1/4 cup of honey
- 1/4 teaspoon of cinnamon
Instructions
- Preheat your oven to 375°F.
- In a large bowl, combine the ricotta cheese, mozzarella cheese, powdered sugar, vanilla extract, and milk. Mix until smooth and creamy. Set aside.
- Take the shredded phyllo dough and separate it gently. Brush a baking sheet with some melted butter. Lay out about 1/4 of the phyllo dough on the sheet and brush it with more melted butter.
- Place a generous spoonful of the cheese mixture along one edge of the phyllo dough. Roll it up tightly to form a log. Repeat this process with the remaining dough and cheese mixture.
- Arrange the rolls on the baking sheet and brush the tops with the remaining melted butter. Bake in the preheated oven for 25-30 minutes, or until golden brown and crispy.
- While the rolls are baking, mix the crushed pistachios and cinnamon in a small bowl.
- Once the rolls are done, remove them from the oven and drizzle with honey. Sprinkle the pistachio mixture over the top while they are still warm.
Notes
- For a richer flavor, try adding a tablespoon of orange blossom water to the cheese mixture.
- You can also substitute the pistachios with finely chopped almonds or walnuts for a different nutty flavor.
