Ingredients

  • 1 cup carrots, shredded
  • 1/2 cup red bell pepper, diced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup raisins
  • 1/4 cup chopped walnuts (optional)
  • 1/4 cup apple cider vinegar
  • 1/4 cup granulated sugar
  • 1/4 cup olive oil
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. In a large bowl, combine the sliced celery, shredded carrots, diced red bell pepper, red onion, raisins, and walnuts if using.
  2. In a separate bowl, whisk together the apple cider vinegar, granulated sugar, olive oil, Dijon mustard, salt, and black pepper until well combined.
  3. Pour the dressing over the salad mixture and toss gently to coat all the ingredients evenly.
  4. Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld.
  5. Serve chilled or at room temperature.

Notes

  • For added crunch, consider substituting sunflower seeds for walnuts.
