Ingredients

- 2 cups celery, thinly sliced
- 1 cup carrots, shredded
- 1/2 cup red bell pepper, diced
- 1/4 cup red onion, thinly sliced
- 1/4 cup raisins
- 1/4 cup chopped walnuts (optional)
- 1/4 cup apple cider vinegar
- 1/4 cup granulated sugar
- 1/4 cup olive oil
- 1 teaspoon Dijon mustard
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- In a large bowl, combine the sliced celery, shredded carrots, diced red bell pepper, red onion, raisins, and walnuts if using.
- In a separate bowl, whisk together the apple cider vinegar, granulated sugar, olive oil, Dijon mustard, salt, and black pepper until well combined.
- Pour the dressing over the salad mixture and toss gently to coat all the ingredients evenly.
- Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld.
- Serve chilled or at room temperature.
Notes
- For added crunch, consider substituting sunflower seeds for walnuts.
- You can also add diced apples or pears for a fruity twist.
- If you prefer a spicier kick, add a pinch of red pepper flakes to the dressing.
