Ingredients

  • 1 cup granulated sugar
  • 1 cup light brown sugar, packed
  • 1 cup vegetable oil
  • 4 large eggs
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 tsp vanilla extract
  • 1 cup chopped pecans
  • Optional Glaze: 1/2 cup powdered sugar
  • Optional Glaze: 2-3 tbsp milk
  • Optional Glaze: 1/2 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish or loaf pans (your choice).
  2. In a large bowl, combine the granulated sugar, brown sugar, and oil. Beat in the eggs, one at a time, until smooth.
  3. In a separate bowl, whisk together the flour, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet mixture, mixing until just combined. Stir in the vanilla extract and chopped pecans.
  5. Pour the batter into the prepared baking dish. Bake for 25–30 minutes, or until a toothpick inserted into the center comes out clean.
  6. Allow the bread to cool slightly before removing it from the pan. If using the glaze, mix powdered sugar, milk, and vanilla in a small bowl, then drizzle over the cooled bread.
