Sweet Alabama Pecan Bread—a moist, delicious treat loaded with pecans and a hint of sweetness.

- 1 cup granulated sugar
- 1 cup light brown sugar, packed
- 1 cup vegetable oil
- 4 large eggs
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 tsp vanilla extract
- 1 cup chopped pecans
- Optional Glaze: 1/2 cup powdered sugar
- Optional Glaze: 2-3 tbsp milk
- Optional Glaze: 1/2 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish or loaf pans (your choice).
- In a large bowl, combine the granulated sugar, brown sugar, and oil. Beat in the eggs, one at a time, until smooth.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined. Stir in the vanilla extract and chopped pecans.
- Pour the batter into the prepared baking dish. Bake for 25–30 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool slightly before removing it from the pan. If using the glaze, mix powdered sugar, milk, and vanilla in a small bowl, then drizzle over the cooled bread.
