  • 1 teaspoon sea salt
  • 1/2 teaspoon freshly cracked black pepper
  • 1/4 teaspoon ground allspice
  • 2 tablespoons olive oil
  • 1/2 cup chicken stock
  • 1/2 cup coconut cream

Instructions

  1. In a mixing bowl, blend the ground veal with panko breadcrumbs, Pecorino Romano cheese, basil, shallots, garlic, egg, sea salt, black pepper, and allspice until the mixture is uniform.
  2. Form the mixture into 8 medallions, each about 1/2 inch thick.
  3. Heat olive oil in a large frying pan over medium heat. Add the medallions and sear them for 4-5 minutes on each side until they develop a golden crust and are fully cooked. Transfer the medallions to a plate and keep warm.
  4. Pour the chicken stock into the same pan, allowing it to bubble gently while scraping the bottom to release any flavorful bits.
  5. Incorporate the coconut cream and let it simmer for 2-3 minutes until the sauce thickens slightly.
  6. Gently place the medallions back into the pan, ensuring they are well-coated with the creamy sauce. Heat for an additional minute to warm through.
  7. Serve the medallions hot, generously topped with the luscious sauce.
