- 1/2 cup panko breadcrumbs

Instructions
- In a mixing bowl, blend the ground veal with panko breadcrumbs, Pecorino Romano cheese, basil, shallots, garlic, egg, sea salt, black pepper, and allspice until the mixture is uniform.
- Form the mixture into 8 medallions, each about 1/2 inch thick.
- Heat olive oil in a large frying pan over medium heat. Add the medallions and sear them for 4-5 minutes on each side until they develop a golden crust and are fully cooked. Transfer the medallions to a plate and keep warm.
- Pour the chicken stock into the same pan, allowing it to bubble gently while scraping the bottom to release any flavorful bits.
- Incorporate the coconut cream and let it simmer for 2-3 minutes until the sauce thickens slightly.
- Gently place the medallions back into the pan, ensuring they are well-coated with the creamy sauce. Heat for an additional minute to warm through.
- Serve the medallions hot, generously topped with the luscious sauce.
